I was prepared to not like this place, since on the outside it is a bit unassuming. However, I was impressed once I got inside. Be sure and check out the bar scene and decor. I had a combo chicken and beef chimichanga smothered in queso. Both were very good. I wasn't overly impressed with the beer selection, but they do have the typical Mexican brews and frozen margaritas. Overall, I'd recommend everyone in the area try it out. I think you'll like it.

My job sent me to Terre Haute for a few weeks, and if you're like me, travel can get you a little bound up and off nature's schedule. When that happens I turn to my "ace in the hole" as it were... Mexican Food. And, since my doctor says it's only healthy to eat Taco Bell 4 times a week, I had to look else were... maybe outside the bun? Instead of running for the boarder, and since eating Taco Bell 4 times a week ensures that I can't run at all. I drove to the newest Mexican restaurant in town. For those of you in Terre Haute that think "Hacienda"!is only one word in the Mexican language, let me reassure you Hacienda Coyotes and Real Hacienda are run by the same people. I found this out because many of the servers looked familiar from the Real Hacienda establishments. I almost thought "do all Hispanic servers look alike?" But no! That's racist! And I don't want to be racist, I just wanted Mexican food. I got the Nacos Mexicanos because I wanted my drive home to be a race with the devil. Will I make home in time to use the facilities or will I add to the plethora of fragrances already accompanying my 1997 mini-van. I like to gamble and since Vegas is too far away, nachos with beans and jalapeños was my game of choice. For anyone one worries about quantiles, do not worry about quantities. At this place there is no eating till you're full. They give you so much food you can eat till you hate yourself. If you're wondering about the quality of the food, maybe you should look at someone else's review, besides, after reading this far would you still even trust my opinion? You want it anyway? Okay, uh... it was real good, like 4 stars good. Either way, I took a chance in Hacienda Coyote. And sure, you COULD say that's because it's where my van stopped because the E on the gas gauge doesn't actually stand for "Enough". But I like to think that I was meant to dine at Coyote and what I experience was a little bit of magic in my belly and not so much indigestion.

The food was excellent. The portions were very large. I could not eat it all. Food was very hot. There were not very many people there when we went, but this restaurant deserves to have a line at the door. The staff was efficient.

Mexican Cuisine

If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.

Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.

Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.
